Chocolate Prune Crispy Fridge Bites

If you’re looking for a nourishing 3pm pick-me-up that actually satisfies, these are a little treasure chest of a snack.

Rich, chocolatey and deliciously chewy, these fridge bites are naturally sweetened with prunes and packed with texture from puffed quinoa, seeds and coconut. They’re lower in sugar than many shop-bought treats and bring a few extra perks too: fibre for digestion, healthy fats for staying power, minerals from seeds, and polyphenols from dark chocolate.

I originally adapted these from a Deliciously Ella recipe when I didn’t have all the ingredients in the cupboard... and accidentally created a version with its own special benefits.

Perfect with a cup of tea, ideal for busy afternoons, and wonderful to keep in the fridge when you need something sweet without the sugar rollercoaster. In addition, you get that extra gut support that will keep your gut happy and regular too.

Chocolate Prune Crispy Fridge Bites

Serves: 18 bites

Prep/Cook Time: 20 minutes + chilling time

Ingredients

50g desiccated coconut

50g puffed quinoa (or gluten-free rice krispies)

100g mixed seeds (pumpkin and sunflower work beautifully)

200g dark chocolate

2 tablespoons coconut oil

250g prunes (or Medjool dates)

100g nut butter (peanut, almond, cashew or even tahini)

Pinch of sea salt

Method

Step 1

Preheat the oven to 160°C fan / 180°C conventional / 350°F. Line an 8 x 8 inch baking tin or 1lb loaf tin with baking parchment.

Step 2

Add the coconut, puffed quinoa and seeds to a baking tray in an even layer. Roast for 10 to 15 minutes until lightly golden. Remove and allow to cool.

Step 3

Melt the dark chocolate and coconut oil together using a glass bowl over a steaming saucepan.

Step 4

Add the prunes, nut butter and sea salt to a food processor. Blend until a coarse paste forms.

Pour in the melted chocolate and add the toasted dry ingredients. Pulse briefly until just combined.

(If using rice krispies, you may prefer to stir them through whole for extra crunch.)

Step 5

Transfer the mixture to the lined tin. Press down firmly into an even layer.

Chill in the fridge for at least 1 hour until firm, then slice into bites.

Storage

Keep in an airtight container in the fridge for up to 1 week... if they survive that long.

Why they’re lovely

Fibre-rich from prunes, seeds and coconut

Lower sugar than many snack bars

Magnesium and minerals from seeds and dark chocolate

Healthy fats for steadier energy

No baking wizardry required

Enjoy 💛
